Lunch for under £5: Roast cauliflower with caraway seeds, raisins and flaked almonds
We love cauliflower because it's cheap, nutritious and doesn't take a lot of preparation

Roast cauliflower with caraway seeds, raisins and flaked almonds
Cauliflower is the star vegetable of the moment. We love it because it’s cheap, nutritious and doesn’t take a lot of preparation for a quick and tasty packed lunch.
- ½ small cauliflower
- 1 tbsp olive oil
- Generous pinch of caraway seeds (or fennel seeds)
- 1 tbsp flaked almonds, toasted (or hazelnuts or walnuts)
- Sea salt, black pepper to season
- 1 tbsp raisins
- 2 tbsp red wine vinegar
- 2 tbsp water
- Generous handful rocket
Pre-heat oven to 190C. Slice the cauliflower into bite-sized florets. Drizzle with olive oil and sprinkle with the caraway seeds and sea salt and cracked black pepper. Roast on a baking tray in the oven until golden brown and crispy, approximately 10 minutes. Meanwhile, soak the raisins in the red wine vinegar and water. When the cauliflower is cooked drain the raisins and mix with together with the almonds and rocket.
