🍺 TASTE your BEER 🍺 This may sound like a no-brainer. Why else would it be brewed, right? Still, tasting, or rather "sensory evaluation", is a much under-utilized instrument for quality management in breweries. 🧪 Basic measurements are taken quite often, but the full spectrum of beer quality and flavor profile will never be captured by any lab experiment, let alone those with affordable equipment. Luckily, us humans are equipped with a great set of sensors! 👃👅👁️ Our senses are in fact very sensitive to changes and differences in aroma, taste and looks. The challenge: they aren't very quantitative. With some training, a panel of people and a limited amount of data analysis can overcome that issue quite easily. 👨🎓 In a collaboration with Maciej Grajewski, PhD of Beer-o-Meter and Bierschrijver Frits Dunnink ✒️, we recently organized a workshop around quality in beer and brewing, centered around the beer style Tripel. We had talks, we had hands-on testing with Beer-o-Meter and everybody participated in a descriptive tasting panel of ten beers. 💡 The tasting forms were online, so I could immediately visualize the results in a dashboard, which gave insight in the aroma profile and balance of basic tastes in every Tripel on the panel, as compared to their peers. A craft brewery's success is about understanding human behaviour. Take this story from a rising craft brewery's taproom. Despite stellar reviews and packed weekend crowds, their weekday sales weren't meeting projections. The beer was exceptional, but customers consistently defaulted to ordering "just a small”. During service observations, the team noticed a pattern. When faced with the choice between "small or large," customers hesitated. There was a subtle but clear discomfort, particularly during weekday visits, about ordering a large craft beer. The high-ABV, artisanal nature of craft beers seemed to amplify this hesitation. Most taprooms might have introduced a middle-tier option. This brewery took a different approach. Their solution was elegantly simple: 1. Add an extra-large size for special occasions 2. Keep the original sizes intact 3. Rebrand the former large as normal The menu change transformed the typical service interaction from: Small or large? to: Small, normal, or large? The results were immediate and significant. The size formerly known as large became the most popular pour. The brewery hadn't changed their recipes, adjusted their pour sizes, or modified their prices. They had simply reframed the choice. This is a valuable lesson in menu psychology. While brewers obsess over hop varieties and malt bills, sometimes the most impactful changes have nothing to do with the beer in the glass. This subtle shift eliminated the unspoken judgment in size selection. Customers could now order a normal pour of their favourite double IPA or imperial stout without the implicit statement about their consumption choices. The takeaway? In craft beer, as in any business, success often lies in understanding not just what people drink, but how they feel about ordering it. *Drink responsibly—know your limits and make smart choices*
