The 3 pins are used to ensure a line contact between the chuck jaws and the workpiece, ensuring that the chuck clamping force is not putting a bending force into the part. I feel round pieces of copper or aluminum would be even better than what was used in this video. Lay them in the same V groove in each chuck jaw to ensure they are all aligned. This also allows the pins to "work" like a universal joint in case the tailstock and chuck are not in perfect alignment with the z axis.
